FINALLY!

Nothing is gonna ruin this Friday


Watch this, it’s cool! TGIF! I was 11min late to work today with wet hair and sans makeup - its going to be one of those days, isn’t…. oh well.

I cam home from work to Tamales and black beans! The Husband makes AMAZING black beans. He also took his first shot at making tamales, we used corn meal not masa harina, which i am sure we could have found at the Mexi grocery store (why we didn’t go there i do not know! ugh!) BUT they were formed perfectly, stuffed with yummy chicken and espicy jalapenos, and really in the end they were just a bit sweet. Overall, first attempt, wonderful.

THEN, oh yeah, we sorted our kitchen stuff! When i moved in i brought a full kitchen to his full kitchen. We have eliminated things along the way, but with the wedding we got a kitchen upgrade, now we have 2,3,and4 of things! OUT OF CONTROL! So we went through last night, kept two of somethings, 3 of just a few, and boxed the rest for donation to friends and then to the shelter. The thing is we both have quality gadgets, i have enough baking pans to float a battle ship, AND you want muffins, you say, I CAN BAKE YOU ANY SIZE. Tiny, regular, large, and EXTRA LARGE! That goes for tarts and cakes too….. not that i am complaining… i girl needs baking pans.

Also, a big shoutout to Brooke! YOU DID IT! So happy, my heart is smiling, but my eyes are crying because you have all you wanted and all you deserve - a happy, healthy, and beautiful little family. My dear husband buys certain things despite the fact we don’t really eat them or eat them quick enough before they spoil - bananas are one of those things. I like bananas, i guess and i have only seen him eat 2 or 3 ever, but we usually have them. As i walked into the kitchen last night, peering down at these very ripe bananas, i thought it’s time for bread.

I looked through several recipes, i would have normally called my Grandma for her recipe BUT with Grandpa being ill, i drudged the internet. I mainly used thisblog by Jenny Steffens Hobick, i have used her recipes before and ADORE her packaging for home backed goods.

Banana Bread:

3-4 overripe bananas
1 cup sugar
3/4 cup unsalted butter, melted
2 large eggs
1 teaspoon pure vanilla extract
2 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt

1/4 teaspoon nutmeg                                                                          
Splash of triple orange liqueur
1 teaspoon cinnamon
1/2 cup nuts, finely chopped (optional)

3 or 4 ripe bananas peeled and mushed with a fork

Add 1 cup sugar to half of the bananas and whip in a mixer until frothy

Add eggs, vanilla, and melted butter. Whisk together until blended. Add dry ingredients, liquor, and rest of bananas and nuts, if desired. Do not over blend.

Pour into baking dish and bake at 350 for 50-60 min!

It’s Sunday night, time to reflect on such a beautiful week. We had a great day; lunch, a movie, plenty of hand holding, kisses, giggles, and finally home to relax. I made white sangria in two separate glasses - guess which glass is my manly man’s?!

I woke up to this lovey site this morning. A and the cats, snuggled sweetly together. I it’s not much but it is a lovely morning to me. And A made delicious grilled salmon and veggie dinner last night. *swwoooon*
